Taco Star Delivered One of Our Favorite Fast-Food Mexican Meals

One of the best parts of a road trip is discovering restaurants you've never heard of before. While traveling through Colorado, we decided to stop at a regional Mexican fast-food chain called Taco Star. We weren't sure what to expect, but by the time we pulled away from the drive-thru, we had already found a restaurant we'd gladly visit again. From the moment we arrived, the experience started on a positive note. The gentleman working the drive-thru was genuinely friendly, welcoming, and professional. Great customer service can be difficult to find in today's fast-food industry, so when an employee goes above and beyond to make guests feel appreciated, it deserves recognition. His positive attitude left a lasting first impression and set the tone for the rest of our visit. The location we visited was in Grand Junction, Colorado. It appears that the company name has several locations in Colorado, but they made be owned and operated differently at each one. Just look for this logo (pictured)!



For our meal, we ordered the Shredded Beef Chimichanga, and it quickly became one of the standout fast-food items we've enjoyed during our travels. The first thing we noticed was the generous portion size. Taco Star didn't skimp on the filling, providing a hearty meal that offered excellent value. The shredded beef was flavorful and satisfying, while the tortilla was fried to a beautiful golden brown. Perhaps the biggest highlight was the texture. The outside of the chimichanga was perfectly crisp without being overly greasy, creating a satisfying crunch with every bite. Inside, the beef remained tender and well-seasoned, making for a combination that was both comforting and delicious.



What impressed us most was that the meal didn't feel like typical fast food. Instead, it tasted like something you might expect from a casual sit-down Mexican restaurant—prepared quickly enough for travelers who need to get back on the road without sacrificing quality. That's a difficult balance to achieve, and Taco Star delivered. Regional restaurant chains often become favorites because they develop loyal local followings while staying focused on quality and service. Based on our experience, it's easy to understand why Taco Star has built such a strong reputation in Colorado. Between the outstanding customer service, generous portions, and well-prepared food, our visit exceeded expectations in nearly every way.
